  • 500g

    Chicken breast

    sliced

  • 3tbsp

    Green curry paste

  • 400ml

    Coconut milk

  • 100ml

    Coconut cream

  • 200ml

    Chicken stock

  • 100g

    Bamboo shoots

  • 1

    Bell pepper

    sliced

  • 2tbsp

    Fish sauce

  • 1tbsp

    Palm sugar

  • 4

    Kaffir lime leaves

  • 1cup

    Thai basil

    fresh

  • 300g

    Jasmine rice

Method

1. Heat coconut cream in a wok over medium-high heat. 2. Add green curry paste and fry for 2 minutes until fragrant. 3. Add chicken and cook until sealed. 4. Pour in coconut milk and chicken stock. Bring to a simmer. 5. Add bamboo shoots and bell pepper. Cook for 5 minutes. 6. Add fish sauce, palm sugar, and kaffir lime leaves. 7. Stir in Thai basil just before serving. 8. Serve over jasmine rice.
