Thai Green Curry

Ingredients(12 items)
- 500g
Chicken breast
sliced
- 3tbsp
Green curry paste
- 400ml
Coconut milk
- 100ml
Coconut cream
- 200ml
Chicken stock
- 100g
Bamboo shoots
- 1
Bell pepper
sliced
- 2tbsp
Fish sauce
- 1tbsp
Palm sugar
- 4
Kaffir lime leaves
- 1cup
Thai basil
fresh
- 300g
Jasmine rice
Method
1. Heat coconut cream in a wok over medium-high heat.
2. Add green curry paste and fry for 2 minutes until fragrant.
3. Add chicken and cook until sealed.
4. Pour in coconut milk and chicken stock. Bring to a simmer.
5. Add bamboo shoots and bell pepper. Cook for 5 minutes.
6. Add fish sauce, palm sugar, and kaffir lime leaves.
7. Stir in Thai basil just before serving.
8. Serve over jasmine rice.
