Classic Caesar Salad
Crisp romaine lettuce with creamy Caesar dressing, crunchy croutons, and Parmesan.

Romaine lettuce
large head
- 75g
Parmesan cheese
grated plus shaved
- 1cup
Croutons
- 2
Anchovy fillets
- 1
Garlic clove
- 2tbsp
Lemon juice
- 1tsp
Dijon mustard
- 1tsp
Worcestershire sauce
- 1
Egg yolk
- 100ml
Olive oil
Method
1. For dressing: Blend anchovy, garlic, lemon juice, Dijon, Worcestershire, and egg yolk.
2. Slowly drizzle in olive oil while blending until emulsified.
3. Stir in grated Parmesan and season with salt and pepper.
4. Tear romaine into bite-sized pieces and place in large bowl.
5. Toss with dressing until well coated.
6. Top with croutons and shaved Parmesan.
7. Finish with freshly cracked black pepper.
