Banana Bread
Moist and delicious banana bread with a hint of cinnamon, perfect for tea time.

Ripe bananas
- 75g
Butter
melted
- 150g
Caster sugar
- 1
Egg
beaten
- 1tsp
Vanilla extract
- 1tsp
Baking soda
- ¼tsp
Salt
- 200g
Plain flour
- 1tsp
Ground cinnamon
- 50g
Walnuts
chopped (optional)
Method
1. Preheat oven to 180°C (350°F). Grease a 9x5 inch loaf pan.
2. In a large bowl, mash bananas until smooth.
3. Stir in melted butter.
4. Mix in sugar, beaten egg, and vanilla.
5. Sprinkle baking soda and salt over mixture and stir.
6. Add flour and cinnamon, mixing until just combined.
7. Fold in walnuts if using.
8. Pour batter into prepared pan.
9. Bake for 55-65 minutes until a toothpick comes out clean.
10. Cool in pan for 10 minutes, then turn out onto a wire rack.
